Ingredients:
- 2 organic carrots
- 1 organic zucchini
- 3 organic mushrooms
- 2 organic tomatoes
- 1/2 organic onion
- 3 cloves organic garlic
- 1 tbsp organic olive oil
- 1/3 c chopped organic walnuts ( toasted)
- 250 g beef mince
- 3 tbsp organic tomato paste
- 1 tbsp organic coconut sugar
- 1/2 tbsp Italian herbs
- Salt and pepper
- 1/2 c organic veggie stock
- 2 organic bay leaves
Method
1. Place all veggies and garlic in a food processor and blitz until it becomes very fine.
2. In a pan heat up oil and add in veggies and sauté for 5 mins.
3. Add in mince and cook for another 5 minutes whilst breaking it up and mixing.
4. Add in all remaining ingredients and simmer for 10 - 15 mins
5. Serve on top of your favourite pasta!
