Creamy (dairy-free) Roast Capsicum Pasta

Super quick & seriously delicious! @sageinfused has created a meal that is creamy, rich & comforting and actually uses coconut cream as the base!

Ingredients:

  • 2 organic capsicums
  • 1 tbsp organic tomato paste
  • 4 organic garlic cloves
  • Salt n pepper
  • 3/4 cup organic coconut cream or milk
  • 1/2 tsp smoked paprika
  • 1/4 c pasta water
  • Cooled pasta of choice


Method:
1. Roughly cut organic capsicums and place on a baking sheet along with garlic cloves (wrap garlic cloves in alfoil with olive oil to avoid burning).

2. Bake in the oven for 40-45 mins.

3. Place cooked capsicum garlic cloves and all remaining ingredients in a blender and blend until smooth

4. Serve with your favourite protein and pasta of your choice!
