Cheesy Pinwheels

Makes 10


- 1 sheet of Pastry ( I like the careme spelt butter one)
- 1/2 cup Ricotta
- 1/4 cup Thyme Feta
- 1/2 cup cheddar cheese, grated
- 1/2 cup Black beans, cooked
- 10 Olives, roughly chopped

Method


1. Defrost the pastry if using frozen. Preheat the oven to 180 degrees and place baking paper on a tray.
2. Roll out the pastry sheet and start sprinkling all the ingredients over it. Try to make sure the sheet is covered and whilst the sprinkling is random that there’s a bit of everything everywhere.
3. Roll up the sheet, folding it on itself and the with a large sharp knife cut it into scrolls, ~1-2cm thick.
4. Lay the scrolls on the lined baking tray and bake in the oven for ~20-30mins, until golden brown.
5. Remove and let cool, enjoy for breakfast, lunch, snacks, also great for lunchboxes! Stores well in the fridge for 3 days.
