We are always in the mood for a good old roast up! Our side dish of choice, no matter the occasion. Grab some quality organic potatoes and sweet potatoes, ghee (our personal favourite roasting oil), your favourite herbs & seasoning and LET'S GO!
Ingredients
- 10 small potatoes
- 5 Sweet potatoes
- 3 tbs Ghee
- 1 tbs Dried herbs (thyme, rosemary, basil, oregano)
- As much fancy salt as you like - our go to is Tweed Real Foods or Pyewackets Fire CIder Salt!
- Preheat oven to 180 degrees and place baking paper on an oven tray
- Wash and roughly chop up potatoes
- Put them in a bowl and coat with the ghee and herbs, tossing and rubbing it in with your hands is the easiest way to coat the potatoes, spread the potatoes out of the oven tray
- Roast for 40 mins or so until they are getting nice and crispy edges, turn on the grill for 5-10mins if you need to
- Remove from the oven and sprinkle liberally with Tweed Real Foods or Pyewackets Fire Cider Salt.
*** If you need a sauce*** Gevity mayo and a good sweet chilli sauce are delicious options!
