Ingredients
● Your favourite organic sourdough
● 1 organic avocado
● 1/2 organic cucumber, diced into cubes
● 1/2 organic tomato, diced into cubes
● 2 cloves of organic garlic, diced finely
● 1/4 organic red onion, diced finely
● 1 stock of organic spring onion, diced finely
● A few pieces of organic coriander leaves, diced finely
● 1/2 organic lime, squeezed into juice
● Salt and pepper
● Chilli flakes (optional) or Cawari spicy seasoning
● 1 - 2 eggs, boiled to your liking (see below for our tips!)
METHOD
1. In a pot of boiling water, add 1-2 eggs. Boil to your liking! 6 mins for runny, 8 mins for soft boiled, and 10 mins for hard boiled.
2. Transfer straight to a bowl of iced water and let cool for 10 minutes, then peel carefully and cut in half.
3. In a bowl, add 1 avocado, mashed. Then add in your diced cucumber, tomato, garlic, onions, lime juice, coriander.
4. Next add salt; pepper, & chilli if youre after some spice.
5. Now mix together with a fork or spoon.
6. Toast your favourite bread! I chose pumpkin sourdough.
7. On the toast, add your chunky avocado mix/ guacamole and top with your boiled eggs. We add organic Carwari spicy seasoning for a bit of an extra kick!
