Sweet, juicy watermelon meets zesty sumac, fresh mint and creamy feta in this wonderfully refreshing summer salad. A drizzle of extra virgin olive oil and balsamic vinegar brings everything together, while a sprinkle of flaky salt adds just the right balance.
Simple, colourful and bursting with fresh flavour, it’s the perfect side for a barbecue, picnic or easy light spring meal.
Ingredients
- 2½ cups watermelon (diced)
- Large handful fresh mint leaves
- 2 heaped tsp sumac
- Large pinch of salt flakes
- 100g feta (crumbled)
- 2 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
Method
- Add the diced watermelon to a large bowl. Sprinkle over the sumac and salt flakes, then gently toss to coat.
- Pick the mint leaves from the stems and scatter over the watermelon.
- Crumble the feta over the top, then drizzle with the olive oil and balsamic vinegar.
- Gently toss everything together and serve immediately.
