Ingredients
- Organic Brown Onion
- Organic Capsicum
- Organic ghee or fat of your choice
- Organic Garlic
- Organic Paprika and CuminĀ
- Tin of organic tomatoes
- Local free range eggs
- Fresh organic herbs to top
- Crusty bread and butter!Ā
Method
1. Start by sautƩing the capsicum and onion for about 5 minutes until the onion becomes translucent
2. Add garlic and spice and stir for another minute to get that fragrance happening
3. Pour over your tin of organic tomatoes and wait until the mixture is slightly simmering
4. Crack in your eggs. I like to use a spatula to make a little hole for each.
5. Cook on low until the eggs are done to your liking.
6. Garnish with fresh herbs and serve with your favourite bread!
