Panzanella Salad

Ingredients
⁃ 8 small tomatoes
⁃ 1 red onion
⁃ Mozzarella ball
⁃ Handful of basil
⁃ 2 slices of old sourdough
⁃ 1 tsp dried oregano
⁃ 1 tsp garlic powder
⁃ 4 tbsp olive oil
⁃ 2 tbsp red wine vinegar
⁃ 1 tsp Dijon mustard
⁃ 1 tsp honey (optional)
⁃ Salt and pepper

Method


1. Turn on grill & line a baking tray with aluminium foil
. Dice up sourdough into thick croutons. Add 2 tbsp olive oil, dried oregano garlic powder, salt and pepper into a bowl and toss croutons to coat evenly. Place on a baking tray & cook under the grill. Once one side is toasted turn and repeat on the other side. Set aside to cool.


2. Cut tomatoes into wedges. Finely slice red onion, tear mozzarella ball & a handful of basil & add to a salad bowl with cooled croutons.


3. Add remaining 2 tbsp olive oil, red wine vinegar, dijon, honey (optional), salt and pepper to a small bowl and mix. Pour over salad and serve immediately.
