Lemon Curd
Ingredients

• 4 egg yolks
• 5 tbsp caster sugar
• Zest of 1 lemon
• ½ cup lemon juice
• Pinch of salt
• 60g unsalted butter

Method

1. Add the sugar and lemon zest to a saucepan and rub together with your fingertips to release the fragrant oils.
2. Add the egg yolks, lemon juice, and salt, then whisk until well combined.
3. Place the saucepan over low-medium heat and whisk continuously until the mixture thickens to a custard-like consistency.
4. Remove from the heat and add the butter, whisking until fully incorporated.
5. Transfer to a sterilised jar and store in the fridge.
