Ingredients
- 1 cup pineapple pieces, diced
- 1 cup red capsicum, diced
- 1 red onion finely diced
- 1 tbs olive oil
- 1 cucumber, diced
- fresh coriander
Method
1. Cut all the ingredients up into small pieces
2. Heat the olive in a fry pan
3. Sauté the pineapple and capsicum together until they are getting a bit charred and caramelised.
4. Remove from the heat into a bowl then mix the cucumber, onion & coriander in.
5. Serve on fish tacos, nachos, salad or whatever mex is on the menu
