Crispy Smashed Potatoes
Ingredients
- 750g potatoes
- ½ tsp garlic powder
- ½ tsp smoked paprika
- 1 tsp dried oregano
- Chilli powder (to taste)
- Extra virgin olive oil
- Salt and pepper (to taste)
Method
- Scrub potatoes clean, keeping the skin on. Place in a large saucepan, cover with water, and add a good pinch of salt.
- Bring to the boil with the lid on. Once boiling, remove the lid and cook until just tender (a fork slides through easily, but they’re not falling apart).
- Preheat fan-forced oven to 200°C. Drain potatoes and place on a baking tray.
- Gently smash each potato using the base of a mug or similar.
- Drizzle generously with olive oil, then sprinkle over garlic powder, smoked paprika, oregano, chilli, salt and pepper.
- Roast for 40–45 minutes, until golden and crispy on the edges.
