Crispy Smashed Potatoes

Rough around the edges in the best way. Crispy, golden, and built for soaking up whatever you throw at them. Not fancy—just done right.

Crispy Smashed Potatoes

Ingredients

  • 750g potatoes
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • 1 tsp dried oregano
  • Chilli powder (to taste)
  • Extra virgin olive oil
  • Salt and pepper (to taste)

Method

  1. Scrub potatoes clean, keeping the skin on. Place in a large saucepan, cover with water, and add a good pinch of salt.
  2. Bring to the boil with the lid on. Once boiling, remove the lid and cook until just tender (a fork slides through easily, but they’re not falling apart).
  3. Preheat fan-forced oven to 200°C. Drain potatoes and place on a baking tray.
  4. Gently smash each potato using the base of a mug or similar.
  5. Drizzle generously with olive oil, then sprinkle over garlic powder, smoked paprika, oregano, chilli, salt and pepper.
  6. Roast for 40–45 minutes, until golden and crispy on the edges.
