A great one for a snack or to throw in the lunch box for a whole food energy boost.
Ingredients:
- 1 ½ cups white or wholemeal spelt flour
- 2 teaspoons baking powder
- ½ cup cacao powder
- ½ cup dark chocolate chips
- ½ cup maple syrup or honey
- 2 cups grated zucchini, grated
- ¼ cup olive oil
- 1 egg
- ½ cup yoghurt
- ¼ cup oat milk
- 1 teaspoon vanilla bean paste
Method:
1. Pre-heat oven to 200 °C. Grease a 12 hole muffin tray.
2. Mix the dry ingredients together. (I used a mixer but in a bowl with a spoon also works well).
3. Mix the wet ingredients (maple syrup, zucchini, egg, oil, yoghurt, milk and vanilla) along with the chocolate chips in a separate bowl until combined.
4. Add the wet ingredients to the dry ingredients and mix until just combined.
5. Divide the mixture evenly amongst the muffin tray.
6. Bake for 13-15 minutes, or until the muffins are firm to touch. Transfer to a wire rack to cool completely. Enjoy!
