Buttermilk Pikelets
Buttermilk is the secret ingredient that takes pikelets from good to gourmet. INGREDIENTS
- 2 organic eggs
- 2 cups of organic self raising flour
- 1/2 teaspoon of organci bicarb soda
- 4 tablespoons of organic coconut sugar
- 1 1/2 cups buttermilk
Beat eggs and sugar. Add flour alternately with the buttermilk in which the bicarb soda has been dissolved and leave for 30 minutes or longer.
Gently fry in a slightly buttered pan and small batches, serve with organic seasonal fruit and pure maple syrup or raw honey.
