Beetroot Salad Collection

Try making yourself a roast beetroot salad with feta, walnuts, roasted onions and your favourite dressing.  It's hard to beat a classic mustard and orange dressing* as the citrus pairs so well with the salty feta and the sweet baby beets.

* the dressing can be made with 5 tablespoons of fresh orange juice, 5 tablespoons of oil ( we blend olive and macadamia oil), a heaped teaspoon of Dijon Mustard with salt and pepper to taste.

Roast your baby beets and any other favourite veggies like onions, fennel or pumpkin. Cool them and then cut in to wedges or cube them depending on how you like it. Add your dressing then top with crumbled feta, chopped walnuts and a few herbs.

We like to serve on a bed of baby spinach, rocket or salad leaves.
