The perfect dish to meal prep when there is a busy week ahead!
This nourishing and warming Bhudda bowl ticks all the boxes and hits the spot. Quick and easy to whip up, the combination of fresh and flavourful ingredients will leave you satisfied and content!
INGREDIENTS
- 1 cup organic quinoa
- 1 tbsp organic turmeric
- Salt and pepper
- Olive oil
- 1 egg
- 2 handfuls organic leafy greens
- ½ handful organic sprouts
- ½ organic avocado, cubed
- Organic Chickpeas
- Organic Smoked paprika
- Garlic powder
- ½ handful Organic Cherry tomatoes, sliced
- Handful Organic spring onion, sliced
- 2 tbsp Organic Tahini
- Organic Lemon juice
- Fresh diced organic garlic
METHOD
- Cook quinoa in rice cooker / pot with 1 tbsp turmeric, diced garlic, salt, pepper, lemon juice and olive oil.
- In a pan on high, add olive oil, chickpeas, diced garlic, a sprinkle of turmeric, smoked paprika, salt and pepper. Cook until chickpeas are slightly charred.
- Boil water and add 1 egg and cook for 8 minutes. Put into cold icy water immediately after for 5-10 minutes and deshell egg. Slice in half.
- Cube ½ an avocado.
- Slice ½ handful cherry tomatoes.
- For the dressing, add 2 tablespoons of tahini, 1 teaspoon of smoked paprika, 2 tablespoons of lemon juice, 1 tablespoon of olive oil, salt and pepper to your liking, and fresh diced garlic.
- Assemble bowl with 2 handfuls of leafy greens on the bottom, add the quinoa mix, chickpeas, egg, tomatoes, avocado.
- Top with sprouts, tahini dressing, salt, pepper, a dash of lemon juice and olive oil, and handful of spring onion, so healthy and tasty! Enjoy.
