Packed with organic goodness, this ultimate veggie burger has a blend of diced garlic, red onion, fresh coriander, shredded carrot, chickpeas, and sweet corn, all seasoned with turmeric, salt, and pepper for a burst of flavour.
Serve on a warm Bread Social panini roll, top with your choice of organic salad, add a side of perfectly roasted sweet potato chips and you have yourself a satisfying meal for the whole fam!
INGREDIENTS
● 5 cloves of diced organic garlic
● 1/2 diced organic red onion
● Handful of organic coriander leaves
● 1 organic carrot, shredded
● 240g organic chickpeas
● 1 cob organic corn
● 3 organic sweet potatoes, cut into chips
● Salt and pepper to taste
● 1/2 tsp turmeric powder
● 3 tbsp organic olive oil
● 1 tsp sesame oil
● Bread social panini roll
● Salad filling of choice
● Sauce of choice
METHOD
1. Preheat the oven to 175 degrees Celsius.
2. Coat your sweet potato fries in seasonings of choice, I chose salt, pepper and doused them in olive oil.
3. Bake sweet potato fries for 20 - 30 Minutes.
4. In a blender or food processor, add in chickpeas, salt, pepper and turmeric and blend until a smooth consistency.
5. In a pan on high heat, add olive oil, diced red onion, diced garlic and coriander leaves. Sautee for a few minutes.
6. Add in your shredded carrot and corn and sauté for another few minutes.
7. Transfer sautéed vegetables in a bowl with your chickpea mix. Mix together until all combined.
8. Divide the mix into portions and make patties with your hands. I also rolled my veggie
patties in sesames to add more crunch.
9. Add olive oil to a pan and fry your veggie patties until each side is crispy.
10. Once your veggie patties are done, put them aside.
11. Now, assemble your burgers. I chose a brioche bun, mayonnaise, 4 leaf salad, a slice of tomato, a slice of onion, salt and pepper.
12. Now enjoy your delicious veggie burger with homemade baked sweet potato fries, and sauce of choice.
