Steak frites with crispy organic fries and homemade chimichurri

INGREDIENTS

  • 1 cut of grass fed steak
  • Handful of organic potatoes
  • Large handful of finely chopped organic parsley
  • 1 organic red chilli, chopped finely
  • Large handful finely diced organic garlic
  • Organic extra virgin olive oil
  • White rice vinegar
  • Handful of organic  rosemary
  • Organic dried mixed herbs
  • Organic smoked paprika
  • Organic garlic powder
  • Organic lime juice
  • Salt and pepper
  • Sliced organic radish
  • Handful of organic salad mix

METHOD

FRIES


1. Cut the organic potatoes into long strips, approximately 5mm-1cm in thickness.
2. Place the fries into a large bowl and cover with cold water. Soak for 30 minutes to 2 hours, depending on how much time you have.
3. Drain the fries and place them onto some paper towel (or a clean, dry tea towel). 4. Thoroughly pat-dry the fries using more paper towel, until all visible moisture is gone. Make sure the bowl you used has been dried after.
5. Return the fries to the dry bowl and add the salt, pepper, organic garlic powder and organic paprika, or your choice of seasonings. Toss or stir until the fries are completely coated in the seasoning mixture.
6. Place the fries into the air fryer basket or oven. 
7. Drizzle over the oil and air fry or bake at 180 °C for 20-25 minutes (for thinner fries) or 25-30 minutes (for 1cm thickness), or until golden and crispy. Remove the basket and toss the fries 2-3 times while they are cooking, to prevent sticking and ensure they are evenly cooked.


MEDIUM RARE STEAK

1. Heat pan up high and add your choice of cooking fat. Organic butter, ghee or olive oil work well.
2. Add in your steak, and cook for 2 MINUTES on each side or to your liking.
3. Add in a small knob of butter, whole organic garlic and handful of rosemary and baste for 1 minute.
4. Remove steak from heat and let sit for 3-5 minutes!
5. Once cooled, slice steak.


HOMEMADE CHIMICHURRI
1. To a bowl, add finely chopped organic parsley, diced organic garlic, white vinegar, organic olive oil and chopped chilli.
2. Mix thoroughly and add salt and pepper to your liking.

ASSEMBLE
1. In a bowl, add in your organic salad mix, squeeze with lime juice and add salt and pepper.

2. Add your fries on one side and your sliced steak on the other.
3. Top with your homemade chimichurri, sliced organic radish, salt and pepper and ENJOY!
