These wholesome Snickers-inspired bars are perfect for preparing ahead and keeping in the freezer for whenever you need a quick energy boost. Whether you're preparing for the arrival of a new baby, need a pick-me-up snack for busy days, or simply looking for a nourishing sweet treat, these bars are full of wholesome ingredients that satisfy.

Makes: 12 bars
Base
* you can play around with what you add here! If you don't have something on hand, don't stress! Get creative and adjust to your preferred taste!

1 cup almond meal

1 cup rolled oats (or substitute with extra almond meal for a grain-free version)

⅓ cup collagen peptides
-
Optional: 1–2 tbsp brewer's yeast*

2 tbsp flaxseed meal
-
2 tbsp chia seeds
-
2 tbsp hemp hearts
-
⅓ cup natural peanut butter
-
¼ cup melted coconut oil or ghee
-
¼ cup honey or maple syrup
-
1 tsp vanilla extract
-
½ tsp cinnamon
-
Pinch of sea salt
If the mixture feels a little dry, add 1–2 tablespoons of milk (dairy or plant-based) until it presses together easily. If too moist - add more dry ingredients!
Press firmly into a lined loaf tin or your freezer container of choice!
Caramel Layer
Blend until smooth:

1 cup Medjool dates
-
⅓ cup natural peanut butter
-
2 tbsp coconut cream or milk
-
1 tsp vanilla extract
-
Pinch of sea salt
If needed, add 1–2 tablespoons of warm water to help everything blend.
Spread evenly over the base.
* I have done this layer with just dates soaked in warm water. Drain nearly all the water and blend into a beautiful caramel!
Crunch Layer
Sprinkle over:

¾ cup roasted nuts, roughly chopped.
* You can use peanuts, cashews, macadamia nuts - whatever!
Chocolate Topping
Quick Option
Melt together:

150 g dark chocolate (70–85%)
-
1 tsp coconut oil
Pour over the peanut layer and finish with a sprinkle of flaky sea salt.
Homemade Chocolate Option
Melt together:

60 g cacao butter
-
30 g cacao powder
-
2 tbsp honey (or maple syrup)
-
1 tsp vanilla extract
-
Pinch of sea salt
Whisk until smooth, then pour over the peanut layer. Finish with flaky sea salt if desired.
To Finish
Freeze until firm!
Slice into bars and store in an airtight container.

These bars are delicious straight from the freezer. They'll have a chewy, fudge-like texture and soften slightly after 5–10 minutes at room temperature if you prefer them a little softer.
