Sesame Snaps (The no-nonsense kind)

Somewhere between “I’ll just make a batch” and “who ate it all?”

Sesame seeds, proper honey, a touch of heat — that’s it.
Goes in soft, comes out golden and snappy.

Break it, share it… or don’t.

Ingredients

  • ½ cup honey
  • 1 tsp vanilla (paste or essence)
  • 1 cup white sesame seeds
  • Pinch flaky sea salt

Method

  1. Preheat oven to 180°C. Line a tray with baking paper.
  2. Gently heat honey, vanilla, and salt in a saucepan (1–2 mins). Don’t boil it — just loosen it up.
  3. Remove from heat, stir through sesame seeds until fully coated.
  4. Spread thinly on the tray (thinner = better snap).
  5. Bake 8–10 mins until golden. Watch it like a hawk — it turns fast.
  6. Cool on tray, then refrigerate for at least 2 hours.
  7. Snap, store, try not to eat the whole batch immediately.
