Somewhere between “I’ll just make a batch” and “who ate it all?”
Sesame seeds, proper honey, a touch of heat — that’s it.
Goes in soft, comes out golden and snappy.
Break it, share it… or don’t.
Ingredients
- ½ cup honey
- 1 tsp vanilla (paste or essence)
- 1 cup white sesame seeds
- Pinch flaky sea salt
Method
- Preheat oven to 180°C. Line a tray with baking paper.
- Gently heat honey, vanilla, and salt in a saucepan (1–2 mins). Don’t boil it — just loosen it up.
- Remove from heat, stir through sesame seeds until fully coated.
- Spread thinly on the tray (thinner = better snap).
- Bake 8–10 mins until golden. Watch it like a hawk — it turns fast.
- Cool on tray, then refrigerate for at least 2 hours.
- Snap, store, try not to eat the whole batch immediately.
