Rustic One Pan Ratatouille

Need a quick mid week dinner recipe to help get your veggies in for the week?! Then look no further than this one pan rustic ratatouille. It is packed full of fibre and ready in under 40 minutes.

Ingredients:
1 onion diced 
2 big garlic cloves minced 
1 red capsicum finely diced 
1 zucchini diced 
1 eggplant diced 
2 tomatoes diced 
1 tbsp olive oil 
1/2 tbsp smoked paprika 
1/2 tbsp dried mixed herbs 
1 can tinned tomatoes + 1/4 c water 
Pinch salt and pepper 


Method:
1. Heat up oil in a sauce pan and add in onion capsicum and garlic, sauté for 1-2 mins 
2. Add in all remaining ingredients and mix well cover with a lid and let simmer for 20-25 mins. Take lid off and simmer for another 5-10mins! Then serve x
