Rocket Salad W/ Farm fresh Halloumi and wild caught Australian Tuna
2 Tbsp good quality organic Olive Oil or Macadamia Oil
1 Tbsp Lemon juice
½ tsp Dijon mustard
1. Layer rocket, tomatoes, tuna, and red onion on your favourite salad platter
2. Just before serving heat some yummy Ghee or Olive Oil in a pan and pan fry the Halloumi until golden brown and add this to your salad just before you are about to serve so it is still soft and warm.
3. Premake the dressing, so you can pour over your salad once the Halloumi is cooked. It's easy, combine the oil, lemon juice and mustard in a jar.
4. Stir through the dressing and serve.
