Get ready to enjoy a farm-to-table experience with our Rocket Salad, starring Haloumi and Wild-Caught Tuna. Fresh greens, juicy tomatoes, and pan-fried haloumi, all topped with a tangy lemon-mustard dressing. It’s a delicious blend of flavors you won’t want to miss!
Ingredients
100g Organic Rocket + 100g OrganicBaby Spinach or Salad Leaves
2 Tbsp Ghee or Olive Oil
150g Organic Cherry Tomatoes
¼ Organic Red Onion or Shallots, sliced finely
200g Haloumi ( rinsed and dried)
120g Wild Caught Tuna in Organic Olive Oil
Dressing
2 Tbsp good quality organic Olive Oil or Macadamia Oil
1 Tbsp Lemon juice
½ Tsp Dijon mustard
1. Layer rocket, tomatoes, tuna, and red onion on your favourite salad platter
2. Just before serving heat some yummy Ghee or Olive Oil in a pan and pan fry the Haloumi until golden brown and add this to your salad just before you are about to serve so it is still soft and warm.
3. Premake the dressing, so you can pour over your salad once the Halloumi is cooked. It's easy, combine the oil, lemon juice and mustard in a jar.
4. Stir through the dressing and serve.
