A five ingredient flavor bomb that can be whipped up in under five minutes ! Using simple & seasonal local produce, this rocket & almond pesto will elevate your meals all week. Mix through fresh local pasta, drizzle over homemade pizza, sprinkle over grilled veggies, dollop on your eggs at breaki or make it the centerpiece of a grazing platter.
Ingredients:
- 3 big handfuls of Farmer Foster's famous spicy rocket
- ½ cup insecticide-free almonds
- ½ cup organic parmesan, roughly grated
- Zest of 1 organic lemon
- 150 mls organic extra virgin olive oil, plus extra for covering pesto to preserve.
- 2 generous pinches of salt
Method:
In the bowl of a food processor, blitz almonds until they are roughly chopped before adding the grated parmesan, lemon zest, salt & rocket. Give a quick blitz (about 30 seconds) before drizzling the 150 mls oil over in a continuous stream. Once the oil has all been added, allow the pesto to mix for a moment until it’s well combined.
Pour into a jar or small bowl & cover with extra oil to preserve (if not serving immediately!)
