Ingredients:
- 2 capsicums
- 1 cup cherry tomatoes
- 3-4 garlic cloves
- Pinch of salt
- Olive oil
- ½ tsp smoked paprika
- Handful of fresh coriander
Method:
- Preheat oven to 180 degrees, cut up capsicum into chunky pieces.
- Place cherry tomatoes, capsicum and garlic on a baking sheet and spray lightly with oil, sprinkle over salt and smoked paprika and bake for 20-25 minutes.
- Remove from oven and allow to cool before adding to a food processor along side coriander and blend until fully combined.
