Roast Tomato & Capsicum Salsa

Ingredients:

  • 2 capsicums
  • 1 cup cherry tomatoes
  • 3-4 garlic cloves 
  • Pinch of salt 
  • Olive oil
  • ½ tsp smoked paprika 
  • Handful of fresh coriander 

Method:

  1. Preheat oven to 180 degrees, cut up capsicum into chunky pieces.
  2. Place cherry tomatoes, capsicum and garlic on a baking sheet and spray lightly with oil, sprinkle over salt and smoked paprika and bake for 20-25 minutes.
  3. Remove from oven and allow to cool before adding to a food processor along side coriander and blend until fully combined.
