Bake Your Escape
Who needs an extended tropical holiday when you can bake it right into a muffin? These pineapple and coconut protein muffins are almost as good as a day on the beach in Byron—complete with a coconut groove and a pineapple twist! Packed with a touch of sweetness and a boost of protein- they won't give you the sugar spike traditional muffins or sweet treats do.They’re perfect for an afternoon snack, or anytime you need a little island escape. Ingredients:
1 free range organic egg
1/3 c organic coconut cream or milk
3/4 c organic spelt flour
1/4 c vanilla protein powder or extra flour
1/4 c organic coconut sugar
1/4 tsp organic baking soda and powder
1 can organic pineapple chunks drained
Method:
1. Preheat oven to 180 degrees
2. In a mixing bowl mix together the egg and coconut cream or milk
3. Add in flour, protein powder, coconut sugar, baking soda and powder and mix until combined
4. Fold in pineapple chunks and scoop mixture evenly into lined muffins trays
5. Sprinkle with extra coconut sugar and bake for 20 - 25 mins
