Mushroom Parmesan and Dill Omelette

Paired perfectly with loads of grated Parmesan and fresh dill this breakfast will be making its way into your weekly rotation in no time!

Ingredients:

  • 3 Organic Eggs
  • 3 Organic Swiss Brown Mushrooms
  • Organic Grated Parmesan
  • Handful fresh organic dill chopped roughly
  • Organic Olive Oil
  • Salt and pepper to tasteΒ 

Served with Gluten Free Turmeric Paleo Loaf

Method: Thinly slice mushrooms and fry in oil for 2-3 minutes. Meanwhile whisk together eggs then pour over mushrooms sprinkle on grated Parmesan, dill salt and pepper. Cook for 1-2 minutes before folding in half and serving with more Parmesan and dill!Β
