Mango Avo Noodle Salad
INGREDIENTS
- 1 x avocado, cubed
- 1 x mango, cubed
- 1 bunch of your favourite noodles
- 1/4 purple cabbage, thinly sliced
- 1 cup of massaged kale (massage with olive oil and lemon juice)
- 1 x corn cob, cooked and cut off the cob
- 1/4 carrot, thinly sliced
- 1 piece of Smoked barramundi or tofu chunks
- 4 tbs of Gevity BBQ great guts mayo
- 1/2 a lime
METHOD
1. Cook the noodles and set aside to cook. Prep all the vegetables and mango.
2. In a big salad bowl layer the massaged kale on the bottom, then the cabbage, carrot, noodles, barramundi/ tofu , avo, mango then corn.
3. Dollop the mayo on top. Serve with a squeeze of lime.
