Green Bean Salad

This is what happens when you don’t overthink it.

Crisp green beans, sweet tomatoes, a hit of balsamic and good olive oil.

Fresh, sharp, and does exactly what it should on the plate.

Ingredients

  • 500g organic green beans, trimmed
  • 250g organic cherry tomatoes, halved
  • ¼ organic red onion, thinly sliced
  • Handful fresh organic Italian basil (parsley or finely sliced fennel and fennel fronds work well too) 
  • 4 tbsp extra virgin olive oil
  • 4 tbsp balsamic vinegar
  • Salt & pepper

Method

  1. Bring a saucepan of salted water to the boil.
  2. Add green beans and blanch for 1–2 minutes until bright green and just tender.
  3. Drain and rinse under cold water to stop the cooking.
  4. Place beans on a serving platter with tomatoes, red onion, and basil.
  5. Drizzle over olive oil and balsamic vinegar.
  6. Season well with salt and pepper, toss lightly, and serve.
