This is what happens when you don’t overthink it.
Crisp green beans, sweet tomatoes, a hit of balsamic and good olive oil.
Fresh, sharp, and does exactly what it should on the plate.
Ingredients
- 500g organic green beans, trimmed
- 250g organic cherry tomatoes, halved
- ¼ organic red onion, thinly sliced
- Handful fresh organic Italian basil (parsley or finely sliced fennel and fennel fronds work well too)
- 4 tbsp extra virgin olive oil
- 4 tbsp balsamic vinegar
- Salt & pepper
Method
- Bring a saucepan of salted water to the boil.
- Add green beans and blanch for 1–2 minutes until bright green and just tender.
- Drain and rinse under cold water to stop the cooking.
- Place beans on a serving platter with tomatoes, red onion, and basil.
- Drizzle over olive oil and balsamic vinegar.
- Season well with salt and pepper, toss lightly, and serve.
