GF Choc Chip Banana Muffins

Are your bananas getting a bit ripe? What do you do?

Our go to is this here recipe from Earth2Table. 

It can be adapted to use your favourite flour, sweetner and of course it is up to you the amount of choccy chips you add!

INGREDIENTS
● 4 ripe organic bananas
● 2 eggs
● 1/4 cup organic coconut oil (or oil of choice)
● 2 tsp vanilla extract
● 1 2/3 cup gluten free flour of your choice!
● 1 tsp baking soda
● 1/2 tsp salt
● 3/4 cup chocolate chips of choice
● Toppings of choice (I chose my favourite chocolate, and coconut flakes)


METHOD
1. Preheat oven to 175 degrees Celsius.
2. Peel and Mash ripe bananas in a mixing bowl.
3. Add eggs, coconut oil (or oil of choice), sugar (or sweetener of choice) and vanilla
extract. Mix together until combined.
4. Add flour, baking soda and salt to the wet ingredients. Mix together until combined.
5. Now, fold in your chocolate chips. Your mixture is ready to be placed in your muffin tray.
6. Scoop batter into lined muffin tray and place in oven for around 20 minutes or until fully
cooked through.
7. Once finished, allow to cool and top muffins with more chocolate and coconut flakes if desired. 
8. Enjoy!!
