Ingredients
- 2 bunches of organic broccolini
- @grampiansoliveco organic EVOO
- @bioitalia organic balsamic vinegar
- 1 tsp organic lemon zest
- Handful of toasted flaked almonds
- Handful of @ceresorganicsau dried organic cranberries
- Handful of chopped fresh organic dill leaves
- 40g of goat cheese
- Salt & pepper (to taste)
Method

Heat the pan:
Preheat a cast iron pan over high heat. Add a drizzle of olive oil. -
Cook the broccolini:
Place one bunch of broccolini in the pan and cook until it starts to get some colour. Flip and repeat on the other side. -
Season:
Add a pinch of salt and a splash of vinegar. Cook until the vinegar has evaporated, then remove from the pan. Repeat with the second bunch. -
Assemble:
Arrange the cooked broccolini on a serving plate. -
Finish:
Top with lemon zest, toasted almonds, cranberries, fresh dill, and crumbled goat cheese.
Season with salt and pepper, then drizzle with a little extra olive oil before serving.
