Festive Broccolini Salad

Ingredients

  • 2 bunches of organic broccolini  
  • @grampiansoliveco organic EVOO 
  • @bioitalia organic balsamic vinegar 
  • 1 tsp organic lemon zest
  • Handful of toasted flaked almonds 
  • Handful of @ceresorganicsau dried organic cranberries 
  • Handful of chopped fresh organic dill leaves 
  • 40g of goat cheese 
  • Salt & pepper (to taste) 

Method

    1. Heat the pan:
      Preheat a cast iron pan over high heat. Add a drizzle of olive oil.
    2. Cook the broccolini:
      Place one bunch of broccolini in the pan and cook until it starts to get some colour. Flip and repeat on the other side.
    3. Season:
      Add a pinch of salt and a splash of vinegar. Cook until the vinegar has evaporated, then remove from the pan. Repeat with the second bunch.
    4. Assemble:
      Arrange the cooked broccolini on a serving plate.
    5. Finish:
      Top with lemon zest, toasted almonds, cranberries, fresh dill, and crumbled goat cheese.
      Season with salt and pepper, then drizzle with a little extra olive oil before serving.
