Creamy roasted cauliflower spaghetti 🍝

Creamy, light and satisfying all in one. A healthy alternative and a comfort meal this creamy cauliflower pasta is wholesome and indulgent. Using the best fresh pasta around takes this dish to the next level.

Ingredients:

  • 1/2 head organic cauliflower
  • 1/2 organic onion
  • 5 cloves organic garlic
  • 1 tbsp organic extra virgin olive oil (Grampians is our go to!)
  • 1 tsp smoked organic paprika
  • 1/4 cup nutritional yeast
  • 1/2 cup - 1 cup organic soy milk depending how thick you want it
  • 2 tbsp organic walnuts
  • Salt and pepper to taste
  • Cooked spaghetti to serve - We love Pasta'bah!

Method:


1. Preheat oven to 180 degrees.

2. Break up cauliflower into florets and place on a lined baking sheet with onion and garlic.

3. Top with organic extra virgin olive oil, organic smoked paprika, salt and pepper.

4. Place in the oven for 30-35 mins.

5. Place in a blender with remaining ingredients and blend until smooth.

6. Pour on top of cooked pasta and mix well!
