Choc Chip Cookies on Buckwheat Flour

Makes 10-20 depending how big you make them!
Gluten-free

INGREDEINTS

  • 1 cup buckwheat flour
  • ½ cup brown rice flour
  • ¾ teaspoon baking powder
  • ½ teaspoon baking soda
  • good pinch of fine salt
  • 115g salted butter, softened
  • ½ cup caster sugar
  • ¼ cup brown sugar or coconut sugar
  • 1 teaspoon vanilla extract
  • 1 large free-range/organic egg
  • 125g Loco love dark chocolate bits

MEHTOD

1. Preheat oven to 180°C
2. Grease two oven trays and/or line with baking paper. Place the flours, baking powder and baking soda into a bowl, then add salt and whisk well to combine.
3. Cream butter, sugars and vanilla with electric beaters or with a wooden spoon until light and fluffy.
4. Add egg and beat until well combined (scrape down the sides of the bowl at this point to get the egg to mix in well)
5. Add dry ingredients and chocolate, and mix to form a soft dough. With clean dry hands, shape the dough into generous tablespoon-sized balls (if you find the dough starting to stick to your hands, wash and dry them again and carry on.)
6. Transfer to oven trays, press down to flatten slightly and bake for 10-12 minutes, or until golden.
7. Remove from oven, set aside to cool. Store in an airtight container and enjoy with your favourite hot drink!
