Cheesy Cauliflower Bake

Kick back, relax and savour the simple flavours of comfort food at its finest. This cheesy cauliflower bake is perfect for a laid back dinner with loved ones or a solo night in, leaving you warm and content!

Ingredients

ROASTED CAULIFLOWER:

  • 1kg cauliflower florets 
  • 2 tbsp organic olive oil
  • 1/2 tsp sea salt
  • 1/8 tsp pepper

CHEESE SAUCE (MORNAY SAUCE):

  • 60g / 4 tbsp unsalted butter
  • 3½ tbsp flour , plain / all-purpose
  • 1 cup Full Cream Milk 
  • 1 cup cream (or more milk)
  • 1/2 tsp cooking salt (kosher salt)
  • 1/4 tsp nutmeg powder (freshly grated is best)
  • 1 ½ cups Cheese (our favourite is a mixture of Cheeses Loves You hard cheeses)

TOPPING:

  • More Cheeses Loves You CHEESE!

METHOD

ROASTED CAULIFLOWER:

  1. Preheat oven to 220°C
  2. Toss the cauliflower in organic olive oil, salt and pepper and spread on a baking tray.
  3. Roast cauliflower for about 20 minutes. It should have some nice colour and still be a bit firm.
  4. Turn oven down to 180°C

CHEESE SAUCE

  1. Heat the milk: Heat milk and cream until hot.
  2. Make roux:Melt the butter in a large saucepan or small pot over medium heat. Add the flour and cook, stirring regularly, for approximately 3 minutes.
  3. Add the milk: While stirring, pour in half the milk. Once this has combined add the remaining milk. Continuously stir for about 1 minute. Once the mixture coats the back of a wooden spoon it is ready!  
  4. Add cheese: Turn off the heat, leaving pot on the element. Add the salt, nutmeg and cheese.
  5. Add in cauliflower: Add cauliflower to the mix and toss to coat.

BAKE:

  1. Add to baking dish and sprinkle with the extra cheese!
  2. Bake at 180°C for approximately  30 minutes
  3. Serve: Sprinkle with toppings of your choice, we chose nuts and a bit of fennel!
