Chai Bliss Balls

These Chai Bliss Balls are like a warm chai latte rolled into snack form. Packed with almond meal, coconut, nut butter and all those cosy spices, they’re the kind of thing you keep in the fridge for “just one little something” with a cup of tea. Soft, lightly sweet and full of the good stuff — no baking, no fuss, just roll and refrigerate.

Ingredients

  • 1 cup almond meal
  • ½ cup shredded coconut
  • ½ cup unflavoured collagen (optional)
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • ½ tsp ground nutmeg
  • ½ tsp ground cardamom
  • ¼ cup pure maple syrup
  • 40g coconut oil, melted
  • 125g ABC or cashew butter
  • 1 tsp vanilla extract
  • Pinch of salt flakes

Don’t Have All The Spices?

No stress. Cinnamon is the main flavour hero here.
You can:

  • use a ready-made chai spice blend instead
  • use just cinnamon + ginger
  • or even cinnamon alone for a simpler version

Still delicious. Still snack-worthy.


Method

  1. In a large bowl, combine almond meal, coconut, collagen and spices. Mix well.
  2. In a separate bowl, whisk together melted coconut oil, maple syrup, nut butter, vanilla and salt until smooth.
  3. Pour wet ingredients into dry ingredients and stir until a dough forms.
  4. Roll into 10–12 bliss balls.
  5. Place onto a lined tray and refrigerate for 1–2 hours until firm.

Storage

Store in an airtight container in the fridge for 10–14 days.
They also freeze beautifully for up to 2 months.
