Broccoli & Mozzarella Fritters

Don't get bored of broccoli when you can create THIS!

Picture this. You going in, stem and all and create a super easy, cheesy, protein rich patty. Just grate, combine and fry until golden brown.

So simple. So good. 

Ingredients:

  • 1 whole head of organic broccoli
  • 100g grated organic mozzarella
  • 2 eggs
  • 2 cloves organic garlic minced
  • 1/3 c organic spelt flour
  • 1/4 c water
  • Fresh organic dill
  • Salt and pepper to taste
  • Organic olive oil to fry


Method:


1. Finely grate the whole head of broccoli including the stem and place in a large mixing bowl.

2. Add in all remaining ingredients and mix until you get a thick mixture.

3. Heat up oil in a frying pan and add in 2-3 tablespoons of mixture for each patty and fry for 3-4 minutes before flipping and frying for another 2-3 minutes or until golden brown and cooked through!
