A beautiful way to start or finish the day with those amazing mangoes we have at the moment. Smells and feels like summer in a cup!
Serves 2
Ingredients:
- 1/4 cup chia seeds
- 3/4 cup Almond milk or your favourite kind of milk
- 1 tsp Vanilla extract
- 1/2 cup Kefir or coconut yoghurt
- 2 Sliced mangoes
- 1/2 cup Farmer Jo Granola
Method:
1. Mix the chia seeds, almond milk and vanilla in a jar, stir, shake and place in the fridge to let the chia absorb the liquid for about 20mins.
2. Once the chia pudding is ready split it between 2 of your favourite glasses. Top with kefir or coconut yoghurt, sliced mango and granola.
3. Serve for breakfast or for an afternoon snack.
