Indulge in this delectable BROWNIE made from ZUCCHINI! The addition of organic zucchini makes it plump and moist. It's perfect for your weekly snacks, and it even tastes better when put in the freezer, hello fudge!
Ingredients:
- 2 Cups Zucchini, chopped roughly
- 1.5 Cups Almond Meal
- 1 Cup Dark Choc, chopped roughly (bigger the better)
- 1/3 Cup Arrowroot Flour (known as tapioca)
- 3 Tbsp Cacao Powder
- 2 Tbsp Maple Syrup or Honey
- 1 Tbsp Apple Cider Vinegar
- 2 Eggs, whisked
- 2 Tbsp Olive Oil
- 1 Tsp Baking Powder
- Optional: extra choc or walnuts for top
Create:
- Preheat oven to 180 degrees.
- In a large bowl, combine all dry ingredients (almond, arrowroot, cacao, baking powder).
- Blend zucchini, maple, ACV, eggs and olive oil until a smooth blend has formed.
- Add the wet to the dry bowl and mix to combine. Once combined add the choccy in and mix through.
- Line a tin with baking paper and pour in the mixture, add your toppings and put into the oven.
- Bake for 30 mins and let it cool slightly before having a bite!
