This simple, five ingredient cake is a rustic yet decadent dessert that will become a family dinner party classic !
Ingredients:

600gms organic oranges or blood oranges, whole (this is 2 or 3 medium oranges however weigh for accuracy !)

6 large free~range eggs, lightly whisked.

1 ¼ cups organic caster sugar.

2 ¾ cups Australian almond meal.

1 ¼ tsp baking powder.
Method:
Wash oranges & place in a saucepan completely covered in water. Bring to the boil & cook for 40 minutes before draining & allowing to cool slightly.
Whilst the oranges are cooling, preheat your oven to 160c & line a springform cake tin with baking paper.
Dice cooked & cooled oranges, removing any seeds & place in the bowl of your food processor.
Blitz the oranges until they form a rustic purée before adding the remaining ingredients & blitzing into a batter.
Pour the cake batter into your prepared cake tin & pop in the oven for 60 minutes or until a skewer inserted into the center comes out clean.
Top with orange slices & dried edible flowers if you’re feeling fancy, otherwise simply serve with organic cream & a cuppa
