Organic Seasonal Poke Bowls

Poke bowls are a great option for summer. You can easily swap ingredients and also add your favourite type of protein. We love basing ours from the seasonal veggie box and adding whatever we are else you are craving!

Method:

In this recipe we will apply 3 different cooking methods: roasting, boiling and steaming. If stored properly will last 3-5 days in the fridge.

1. Firstly roast your sweet potatoes and cook the rice (1:2 rice/water ratio)

2. Cut cucumber and season cucumber with apple cider vinegar, olive oil, salt and pepper.

3. Next, steam broccoli for 3 minutes. Cool down broccoli on cold water.

4. Chop parsley very fine. Cool down rice and add parsley, seeds, olive oil, lemon juice, salt and pepper
