Ingredients:
150g spelt flour
85g softened butter
35 g raw sugar
(Optional lemon vest)
Method:
1. In a stand mixer or with a hand held mixer beat butter for 2-3 minutes
2. Slowly add in sugar until full incorporated if staying lemon vest add that in also
3. Slowly add in flour until fully incorporated
4. Roll out dough onto a surface and knead until smooth then roll to around 2 cm thick then cut out shapes with a cookie cutter and place on a lined baking sheet
5. Place into a preheated oven at 160 degrees and bake for 15 mins let cool completely before eating!
