Makes approx 9 scones
- 350g Spelt Flour
- 2 tsp baking powder
- ½ tsp bicarb soda
- a good pinch of salt
- 85g Butter
- 280ml Buttermilk
1. Preheat the oven to 200C fan mode. Mix the flour, baking powder, bicarb soda and salt in a bowl. Add the butter, cut into small pieces and rub in with your fingertips until the mixture resembles fine breadcrumbs.
2. Tip in the buttermilk and mix lightly and quickly to form a soft dough. Knead very briefly, then roll out to 2cm thickness and cut into rustic squares, or use a cookie cutter for nice circles.
3. Put on them a baking sheet leaving a bit of room in between and bake for 12-15 minutes, until risen and pale golden.
4. Serve with local crème fraîche and jam! Best eaten fresh but they are nice again the next day warmed up.
Add some sultanas, chopped dates or cheese and chives for a few fun additions to the dough!
