If you crave satay sauce (but way healthier than what they normally serve at restaurants), this recipe is for you.
Using beautiful local products with amazing ingredients this is a fast, healthy way to make the most delicious satay you’ve ever had! A very versatile recipe that takes about 20 mins to throw together. Enjoy!
Ingredients
1 block Organic Tofu, cubed
1 jar Byron Bay peanut butter satay
1 400ml Coconut milk /cream
2 tbs Ghee
1 bunch Soba noodles, cooked and cooled with a splash of cold pressed sesame oil mixed through
1 x Lettuce, leaves washing and thinly sliced
1 Cucumber, thinly sliced
1 Carrot and/or daikon, thinly sliced
Pumpkin seeds/ Pepitas, toasted, to sprinkle on top
Method
1. Heat the ghee in a fry pan, sear tofu cubes until browned then add a jar of satay and the tin of coconut milk, let it gently bubble away so the sauce thickens, ~10 mins.
