File this recipe into your fail~safe family favourites. Made with simple ingredients, in a single bowl & easy enough for the kids to make. Bake half & freeze half for later, or double the batch as they last for about a week in an airtight cookie jar.
Ingredients
170gm organic salted butter, melted.
300gms organic sugar (ideally half caster sugar, half brown sugar, but all caster sugar works fine too!)
1 organic egg, plus 1 extra organic egg yolk.
1 TSP organic vanilla extract.
250gm organic plain flour.
1/2 TSP Bicarb soda.
150gms organic chocolate chips.
Flaky sea salt to sprinkle (optional)
Method
Preheat oven to 180c & line two baking sheets with baking paper.
Melt the butter in a small saucepan over low heat.
Measure the sugar into a large mix in bowl, pour over the melted butter & mix with electric beaters until the sugar has dissolved.
Add the egg, the extra yolk & the vanilla, beating until smooth & a little fluffy.
Tip in the flour & bicarb soda & continue to beat until a smooth dough forms.
Using a wooden spoon or spatular carefully mix through the chocolate chips until they’re well incorporated.
Measure out even~ish dessert spoons of the cookie dough, rolling into balls with your hands & then gently flattening onto the trays.
Sprinkle with the flaky sea salt if using & slide into the oven, baking for 10 minutes.
The cookies will look puffy & slightly underdone. However they will firm up whilst cooling on a wire rack !
