Pumpkin Gnocchi w/ Spinach Pesto

Pumpkin gnocchi might sound fancy, but it's easier to whip up than you'd think! Using our hearty organic JAP pumpkin, @sageinfused has crafted a recipe that's not just delicious but also down-to-earth. This gnocchi is all about bringing the rich, wholesome flavours of the farm to your table. With a soft, tender bite and a hint of natural sweetness from the pumpkin. Ingredients:

  • 1/2 Organic Pumpkin
  • 1 1/2 - 2 cups organic plain flour or flour of choice ( depending how soft you want them)
  • Salt
  • Organic Butter for frying


Spinach pesto:

  • 2 cups packed organic spinach
  • 1 clove organic garlic
  • 2 tbsp organic olive oil
  • 1/4 cup grated organic parmesan cheese
  • 2 tbsp organic pine nuts . You can swap out traditional pine nuts in pesto with pistachios, almonds, walnuts, or even seeds like sunflower, sesame, or pumpkin. Almost any edible nut will add great flavor—just remember to toast and cool them before blending into the sauce
  • Salt and pepper

Blended together until smooth

Method:
Finely dice pumpkin and boil until tender then drain completely and mash then add to a bowl with the flour and mix until it forms a dough. Place the dough on a floured surface and dicing into 4 pieces, roll out the dough into a log like shape the thickness of your thumb then cut every 1-2 inch to form your gnocchi, place into a pot of boiling water in batches and boil until the all start floating to the top this will take around 1 minute. In a pan heat up some butter and lightly fry the gnocchi for 3-4 minutes then stir through the sauce and serve.
