Ingredients
- 2 tablespoons of ghee or organic butter
- 1 cup chopped onion
- 1 garlic clove
- 3 to 4 chopped organic pears
- 2 medium to large peeled and chopped organic white potato
- 2 medium peeled and chopped organic sweet potato
- 1 teaspoon salt
- Handful of chopped herbs (thyme or parsley go well)
- 3-4 cups chicken broth (or vegetable)
- 2 tablespoons Coconut Chips
- Handful of Parsley for Garnish
Instructions
- Melt your Ghee over medium heat in a large pot, add the garlic and onion; sautee for 5 minutes
- Add the pears, sweet potatoes, potato, salt and herbs; cook and stir 5 additional minutes.
- Add in the broth, bring to boil, cover and simmer for 30 minutes
- Use a blender to blend until very smooth then season with salt and pepper to liking.
- Add toasted coconut chips and parsley to garnish
