150g butter, melted
1 organic orange - zest and juice
200g almond meal
1 cup self raising flour (GF)
1 tsp baking powder
1/2 tsp ground cardamom
2/3 cup pure maple syrup
Preheat oven to 170c
Melt the butter.
Add to a bowl with the maple syrup, eggs, orange zest and juice. Whisk well.
Then mix in the flour, almond meal, baking powder and cardamom.
Add to a loaf tin lined with baking paper. Bake for 50 mins or until a skewer comes out clean. You could also make these into muffins too, set the timer for 25 mins, then check if cooked through.
Serve with Greek yoghurt, mascarpone, or ricotta and some fresh orange zest
