A beautiful Italian thick tomato soup full fibre from vegetables and beans. A nice and easy dinner or lunch that's full of flavour!
Ingredients:
- 3 tbs olive oil
- 1 x 500ml passata
- 500ml Stock
- 2 tbs tomato paste
- 1 cup of pasta / any small shaped pasta will do
- 1 cup of cooked chickpeas or cannellini beans
- 1 cup of Peas / broad beans
- 1 large Zucchini, chopped
- 2 medium Carrots, chopped
- 2 large handfuls of Spinach
- 2 Celery sticks
- 1 Bay leaf
- 3 gloves Garlic
Method:
1. Heat the olive oil in a large pot, add in the chopped carrot, zucchini, celery and garlic and sautée for a few minutes.
2. Pour in the passata, tomato paste, stock, bay leaf and stir. Once it’s gentler simmered add in the chickpeas, peas, spinach and pasta, let simmer for another 10-20mins, until everything is soft and cooked through. Add more stock as needed.
3. Serve with fresh parmesan and a drizzle of olive oil. Enjoy!
