Our organically grown cherry tomatoes are bursting with flavour this time of year and perfect for this fresh tomato relish featured in this delicious dish.
@earth2table has chosen some high-quality salmon to be accompanied with some organically grown, hand picked peppered green beens and roasted organic sweet potato.
This dish is fragrant, fresh and full of goodness!
INGREDIENTS
● 1 - 2 pieces of salmon
● 1 punnet of organic cherry tomatoes
● 1/2 organic red onion
● 1 organic lemon, squeezed
● Handful of organic green beans, ends chopped
● 3 small organic sweet potatoes, chopped into thick cubes
● 1 tsp herbs of choice
● Salt and pepper
● Handful of garlic
● Handful of chopped parsley
● Chilli flakes (optional)
● Organic olive oil or fat of your choice
● Smoked paprika
METHOD
2. Season salmon with salt, pepper, chilli flakes (optional) and smoked paprika.
3. Add salmon to the pan and sear on each side.
4. In another pan, add in chopped cherry tomatoes, diced garlic, diced red onion, and sautee on high. After 5 minutes, add in your dried herbs of choice and fresh parsley. 10 minutes later, add in your squeezed lemon, salt and pepper to taste. Add chilli flakes if desired (highly recommended!)
● In another pan, add olive oil, green beans, salt and pepper. Toast your green beans on high heat until slightly cooked. The goal is for the beans to still be crunchy and not fully cooked through.
● In an oven or airfryer on 180 degrees Celsius, add sweet potatoes with seasonings of choice covered In olive oil. Keep checking on sweet potatoes, flipping them occasionally so they are evenly cooked through.
● Assemble! Add Beans to one side of your plate, then sweet potato, then your beautiful salmon topped with the delicious tomato relish.
