Loaded Chicken Soba With Sesame Greens

Loaded Chicken Soba 

 

Ingredients:

  • 2x Chicken Breast
  • 1 Tbsp Chicken Bone Broth Powder
  • Soba Noodles
  • Ginger 
  • Garlic
  • Chilli
  • Leafy Greens 
  • 2 Tbsp Tamari Soy
  • 2 Tbsp Sake
  • 2 Tbsp Mirin 
  • 2 Tbsp Dashi
  • Small Onion
  • Spring onions
  • 1-2 Tsp Sesame oil
  • Pinch Sesame Seeds
  • 1 Tsp Rice Vinegar
  • Salt & Pepper 

Method:

  • Start by toasting the onion, spring onion and ginger, dry, in a saucepan till slightly charred.
  • Poach your chicken breast over medium heat with 750ml water, chicken bone broth powder, dashi, half 1 tbsp soy, sake, mirin, until cooked through. (skim off any foamy impurities)
  • In another pan, flash sauté greens with garlic, half the sesame oil, salt & pepper and a pinch of sesame seeds.
  • Cook soba noodles per packet instructions.
  • Assemble- in the bottom of each serving bowl, 1 tsp soy, 1 tsp vinegar, dash of sesame oil and mix.
  • Pour in broth, add your soba, top with sesame greens and thinly sliced poached chicken.
  • Top with fresh springs onions, pickled ginger and chilli oil.
