Loaded Chicken Soba
Ingredients:
- 2x Chicken Breast
- 1 Tbsp Chicken Bone Broth Powder
- Soba Noodles
- Ginger
- Garlic
- Chilli
- Leafy Greens
- 2 Tbsp Tamari Soy
- 2 Tbsp Sake
- 2 Tbsp Mirin
- 2 Tbsp Dashi
- Small Onion
- Spring onions
- 1-2 Tsp Sesame oil
- Pinch Sesame Seeds
- 1 Tsp Rice Vinegar
- Salt & Pepper
Method:
- Start by toasting the onion, spring onion and ginger, dry, in a saucepan till slightly charred.
- Poach your chicken breast over medium heat with 750ml water, chicken bone broth powder, dashi, half 1 tbsp soy, sake, mirin, until cooked through. (skim off any foamy impurities)
- In another pan, flash sauté greens with garlic, half the sesame oil, salt & pepper and a pinch of sesame seeds.
- Cook soba noodles per packet instructions.
- Assemble- in the bottom of each serving bowl, 1 tsp soy, 1 tsp vinegar, dash of sesame oil and mix.
- Pour in broth, add your soba, top with sesame greens and thinly sliced poached chicken.
- Top with fresh springs onions, pickled ginger and chilli oil.
