LOADED CHICKEN NACHOS
Larry's Local Avocados are BACK IN TOWN and we're celebrating with a fiesta of fresh flavours We can confirm, these loaded chicken nachos will be a party for your taste buds. @Earth2Table shows us how it's done with this simple but seriously satisfying recipe that you can share with friends or enjoy solo!
INGREDIENTS:
- Corn chips of your choice
- Guacamole (Avocado, lime juice, diced garlic, chilli flakes, salt, pepper, diced tomato, diced red onion
- Pico de gallo (diced garlic, red onion, tomato, coriander leaves, lime juice, salt and pepper)
- Garlic charred corn (diced garlic, chilli flakes, salt, pepper olive oil and corn)
- Chipotle chicken seasoning (shredded chicken, chipotle seasoning, smoked paprika, salt, pepper, smoked paprika and olive oil.
- Sour cream or Chipotle Mayo!
METHOD:
- Preheat oven to 180 degrees Celsius.
- Make guacamole and pico de gallo with all ingredients listed.
- For the corn, heat up pan on high in olive oil and sauté garlic for 2 minutes. Next add corn, chilli flakes, salt and pepper to the pan and cook until corn is charred.
- For the chicken filling, heat up pan on high in olive oil and sauté garlic for 2 minutes. Add roast chicken, chipotle seasoning, smoked paprika, salt and pepper to your liking. Add a splash of water and cook until chicken is a soft texture.
- To a tray, add corn chips, chicken filling and cheese. Heat in oven until cheese is melted.
- Once out of oven, add corn filling, pico de gallo, guacamole, and a big dollop of sour cream or Chipotle mayo! Then top with some more coriander and there you have it. The most delicious loaded chicken nachos!
